Tasty Tuesday... Chicken Tip

My very good friend Cari gave me the greatest tip. But, you're going to read this and say, "Duh, Heather, I've been doing that forever." But for some reason I've never thought to do this, and I think it's the best idea ever.

Last Saturday I was complaining to Cari that I hate to make casseroles that involve having to pre-cook chicken, so I basically tend to avoid them because they seem like too much work.

So Cari's Chicken Tip is: Buy a big bag of frozen chicken (preferably on sale) and cook the whole thing in the microwave (or oven). Then shred all of it, and freeze it up. Viola! Whenever you need some shredded chicken for a soup, casserole, or anything else, you have it.

Why didn't I think of that?!

So yesterday I cooked EIGHT pounds of chicken, shredded it, and now I'm going to be the chicken casserole queen.

Sometimes I boil mine too... it's easy and I can do it in a gigantic pot! Plus, you can boil it while it's still a bit frozen-- no thawing required... just let it boil longer.

I've done mine in the crockpot before...just cover the frozen chicken with chicken broth and leave it on low all day while you're at work...
