This recipe is my go-to when I need a quick and pretty recipe for any occasion. Its so pretty that it makes people think you worked a lot harder than you did. It's kind of a variation of a recipe called Strawberry Delight that I got from my friend Stacy (who I think should post the original so we'll all have that one too). This was my back up when I ruined the desert for last Saturday's shower, and I'm posting the recipe because it disappeared in about two minutes... which is also why I don't have a picture.
Strawberry Angel Food Cake
Ingredients:
1 angel food cake (I obviously use store bought)
1 small pkg. vanilla pudding
1/2 c. milk
4oz. cool whip (1/2 tub)
1/3 c. frozen strawberries, thawed
2 1/2 c. powdered sugar
Directions:
Slice the angel food cake across the middle, so that you have two layers. In a small bowl, combine the pudding, milk and cool whip. Place one layer of the cake on a pretty cake stand or plate, top with the cool whip mixture. Place second layer of cake on top. (Pat yourself on the back, that's it, you're done with the cake.)
Puree thawed frozen strawberries in a food processor or blender . Combine powdered sugar and pureed strawberries to make a glaze. Pour strawberry glaze over the angel food cake. (Now lick the spatula and admire your pretty cake.)
And to make it extra pretty, dust with powdered sugar. Frozen strawberries work well for the glaze because of the extra juice, but fresh are always great in season. If you have them, garnish with fresh strawberries and add a layer of strawberries to the filling layer on the cake.

Thanks for sharing, Heather! We're having some of Kyle's coworkers and their wives over for a holiday gathering this weekend and I was trying to find an easy dessert. This will be perfect!
