Yumm... we had a fabulous Labor Day weekend. The weather was perfect, got to spend time with both sides of the family, Justin's sister was home from L.A. for a play that we saw Saturday night (which was really funny), and I made a scrumptious fall desert that had me ready for the leaves to start changing! Nothing says fall more than apples and caramel!
Caramel Apple Crisp
8c. peeled, thinly sliced tart apples
3c. old fashioned oats
2c. flour
1.5c. packed brown sugar
1t. cinnamon
1c. cold butter
1 (14oz.) pkg. caramels (unwrapped)
1c. apple cider
In a large bowl, combine the oats, flour, brown sugar, and cinnamon; cut in butter until crumbly. Press 1/2 mixture into a greased 9"x13" baking dish. Layer with 1/2 the apples, 1/2 the caramels, and 1 cup oat mixture. Repeat layers. Pour 1/2 cup cider over top.
Bake, uncovered at 350 degrees for 30 minutes. Drizzle with remaining cider; bake 15-20 minutes longer or until apples are tender.
