Tasty Tuesday: First Birthday, Strawberry Cupcakes

If you are a little girl in my household, then your first birthday will be Strawberry Cupcakes. Because this was my first birthday cake. And what's more appropriate than a pretty pink cake for your very first birthday?

I baked these yesterday and put them in the freezer, for the big day coming up on Saturday!

Strawberry Cupcakes

Cake:
1 box white cake mix
1 box strawberry jello
3 T. flour
2/3 c. oil
1/2 c. water
4 eggs
2/3 pkg (10 oz.) frozen strawberries, thawed (use liquid)

Combine all ingredients. Bake with cupcake liners at 350 degrees for about 20 minutes. If you bake it as one big 9x13 cake, about 35-40 minutes.

Frosting:
1 box powdered sugar
1 stick butter or margarine
Remaining 1/3 strawberries

Combine all ingredients. (To get a more "piping" type frosting, you'll need to about double the powdered sugar.)
