Tasty Tuesday - Mediterranean Salmon

Today I begin a new era of Harbert blogging - Tasty Tuesday! I have so many recipes that I want to share (and to be honest I do this for selfish reasons mostly - the blog has been a wonderful way for me to go back and find recipes that I wanted to remember). So I decided to dedicate a day each week to sharing recipes. (I'd love to see your recipes too!)

I found the base of this recipe at allrecipes.com and spiced it up a bit... turned out so good that we've had it several times in the past few weeks. It's light and yummy, and really fast. Really great with rice and roasted broccoli or cauliflower. this one's for you Mom :)

Mediterranean Salmon

Ingredients:
1/2c. olive oil
1/4c. balsamic vinegar
4 cloves garlic, 3 cracked and 1 minced

4 (3oz) salmon fillets
1T chopped fresh cilantro
1T chopped fresh basil
½ small can chopped black olives
2 roma tomatoes, diced
Salt & pepper

Directions:
Mix together the olive oil, balsamic vinegar, chopped herbs, minced garlic, olives, and tomatoes, in a small bowl. Arrange salmon fillets in a shallow baking dish. Rub cracked garlic onto the fillets and season with salt and pepper on both sides, leave garlic in the baking dish. Pour the olive oil mixture over the fillets, turning once to coat. Set aside to marinate for 10 minutes.

Cook in 400 degree oven for about 15 minutes, or until browned and easily flaked with a fork. Brush occasionally with sauce from the pan. Serves four.

Sounds yummy...I wonder if this would work for Chicken, too? Baby Retherford apparently isn't a fan of seafood these days...

I've was actually planning on trying this on chicken this week! ...I understand about the seafood, too - I couldn't stand it when I was pregnant either. Don't worry though, I can eat it now!
